Ingredients

For the Shrimp Alfredo:

  • 1 lb fettuccine pasta
  • 1 lb large shrimp peeled, deveined, tails removed
  • 2 tablespoons olive oil or butter
  • 2 garlic cloves minced
  • Salt and black pepper to taste
  • 1/4 teaspoon paprika optional, for flavor and color
  • For the Alfredo Sauce:
  • 1/2 cup unsalted butter
  • 2 cups heavy cream
  • 1 1/2 cups freshly grated Parmesan cheese
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg optional, for warmth and depth
  • Garnishes Optional:
  • Fresh parsley chopped
  • Additional grated Parmesan cheese

Instructions

Directions

  • Step 1: Prepare the Pasta
  • Bring a large pot of salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, drain, and set the pasta aside.
  • Step 2: Cook the Shrimp
  • Heat olive oil or butter in a large skillet over medium heat.
  • Season shrimp with salt, pepper, and paprika (if using). Add shrimp to the skillet in a single layer and cook for 2–3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.
  • Step 3: Make the Alfredo Sauce
  • In the same skillet, melt butter over low heat. Add minced garlic and sauté for 30 seconds until fragrant.
  • Stir in heavy cream and bring to a gentle simmer. Let it cook for 4–5 minutes, stirring occasionally, until slightly thickened.
  • Remove from heat and gradually whisk in Parmesan cheese until fully melted and smooth. Season with salt, pepper, and nutmeg. If the sauce is too thick, add a splash of reserved pasta water for the desired consistency.
  • Step 4: Combine Pasta, Sauce, and Shrimp
  • Add the cooked fettuccine to the skillet with the Alfredo sauce. Toss gently to coat the pasta evenly.
  • Add the cooked shrimp back into the skillet and toss to combine. Let it warm through for 1–2 minutes.
  • Step 5: Serve and Garnish
  • Transfer the Shrimp Alfredo to serving plates or a large serving dish. Garnish with fresh parsley and additional Parmesan cheese.
