Step 1: Prepare the Pasta
Bring a large pot of salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, drain, and set the pasta aside.
Step 2: Cook the Shrimp
Heat olive oil or butter in a large skillet over medium heat.
Season shrimp with salt, pepper, and paprika (if using). Add shrimp to the skillet in a single layer and cook for 2–3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.
Step 3: Make the Alfredo Sauce
In the same skillet, melt butter over low heat. Add minced garlic and sauté for 30 seconds until fragrant.
Stir in heavy cream and bring to a gentle simmer. Let it cook for 4–5 minutes, stirring occasionally, until slightly thickened.
Remove from heat and gradually whisk in Parmesan cheese until fully melted and smooth. Season with salt, pepper, and nutmeg. If the sauce is too thick, add a splash of reserved pasta water for the desired consistency.
Step 4: Combine Pasta, Sauce, and Shrimp
Add the cooked fettuccine to the skillet with the Alfredo sauce. Toss gently to coat the pasta evenly.
Add the cooked shrimp back into the skillet and toss to combine. Let it warm through for 1–2 minutes.
Step 5: Serve and Garnish
Transfer the Shrimp Alfredo to serving plates or a large serving dish. Garnish with fresh parsley and additional Parmesan cheese.
